We usually cut chicken leg into bite size and put chicken pieces into bowl with Sake(rice wine), grated ginger, grated garlic, soy sause, and salt.
Knead them by hand.
Add egg to the bowl, and knead again.
And coat chickin pieces with weat flour ( or potato starcy).
Then, deep-fry chicken pieces in oil.

I am not familiar with potato starch. I might try this. Do you know a dish with a white sauce, with small shrimp, peas, and maybe some small squid? It is served in a small round shallow pan?
I think maybe it is made with rice flour, but I don't know for sure.
It was a favorite dish I had in Japan, next to sushi and noodles.
